Description
The Bhoona process is extended to cooking an entire curry by stir-frying it right through to completion. At the restaurant, it would be totally impractical to stir-fry anything for an hour, and the restaurant Bhoona is a Medium Curry using half the amount of curry gravy to present a mild, dryish curry, usually cooked with a little coconut and fresh coriander.
